How do People Use Hidden Text?
Many people use hidden text or 1 by 1 pixel images with keyword rich alt statements. Another way to hide text is to use CSS to position text behind an element or off the page. If your page is found to be doing these you may get de listed. You should be able to creatively stick your keywords in the content without needing the extra cheese techniques.
Why I do Not Use Hidden Text
Using invisible text looks unprofessional to those who see it, and is just a way of selling yourself short in the long run. I typically would not link to a site that is using invisible text.
Using a proper page structure and placing your keywords in the important places (inbound link text, page title, meta description, heading, subheadings, and body copy) you will be able to obtain decent rankings without using hidden text.
What if I Find Hidden Text?
Generally search engines are not real good at finding it. If you see a competitor that uses hidden text feel free to report "spam" to the major search engines. Yahoo! actively edits their search results. By getting your competitors removed from the search results you can be sure your rankings will improve.
After you report the spam do not make it your primary concern. Continue working on your site and eventually your rankings will improve.
